How do I tell whether I need this touch panel or the 30-pin non-touch version?
Check two things. The label on the back of the screen you are removing — if it reads 40 pins, or mentions 00UR888, 00UR889, this is the right panel. If it reads 30 pins, or mentions 01ER492 / 00UR885 / 00UR886 / 00UR887 / 01HY449, you need the non-touch version instead. And whether the machine responds to touch — if it does not respond to finger or pen input at all, the panel you are replacing was the non-touch one. Both versions are 15.6″ FHD 1920 x 1080 250 cd/m² IPS matte, so the size and resolution will not tell them apart; the pin count and the touch behaviour will.
Does the touch layer come separately, or is it built into the panel?
